Low Fat Mashed Potatoes

Keeping fit during the holidays can be a challenge, especially when the holiday meal consists of high calorie, high fat treats.  Try substituting your family's fat laden favorites with tasty low-fat alternatives. 

Low Fat Mashed Potatoes
This healthy variation on a family classic is sure to be a hit at your next holiday meal!

Serves: 6 | Prep time: 20 Mins


1 pound potatoes, unpeeled, chopped into pieces
½ head garlic
¾ teaspoon olive oil
2 tablespoons fat-free sour cream
2 tablespoons reduced-fat butter
2 tablespoons 1% fat milk
½ teaspoon salt (to taste)
Fresh ground pepper (to taste)


1. Preheat oven to 350 degrees.

2. Separate garlic into individual cloves. Do not peel cloves. Toss in olive oil and wrap tightly in small piece of aluminum foil.

3. Roast garlic in oven for 45 minutes.

4. While the garlic is roasting, add potatoes to a pot.  Cover with water and bring to a boil.  Simmer covered until tender, about 15 minutes. Drain potatoes and add back to the hot pot. Mash up potatoes to desired texture.

5. Remove garlic from oven and set aside to cool. Once garlic has cooled, peel them from the cloves, and mash with a fork.

6.To the pot of mashed potatoes, add mashed garlic, sour cream, butter, milk, salt and pepper. Mix together ingredients until smooth.  Heat on low before serving. Add salt and pepper to taste.
